Sweet Potato Bun Burger
One of the best purchases I have made since becoming more health-conscious over the past year was a spiralizer. A spiralizer, which turns vegetables into noodles, is necessary to recreate this recipe. With ingredients that give you your daily needs of vitamins A, C, and K the sweet potato bun burger is sure to hit your taste palate. I highly recommend the Paderno World Cuisine Vegetable Slicer from Amazon. Without further ado, here is the recipe for the sweet potato bun burger.
Ingredients
For the noodle buns:
1 medium sweet potato, peeled, Blade C
1.5 tablespoons of olive oil
1 egg
For the rest:
1-2 slices of tomato
1-2 pieces of kale
½ of an avocado
1 oz goat cheese
2 ramekins
2 canned food items (any)
Wax paper
Instructions:
1. Spiralize the sweet potato using Blade C.
2. Place a large skillet on your stovetop over medium heat. Put in the spiralized sweet potato noodles and a ½ tablespoon of olive oil, and cook for approximately 6-8 minutes. The noodles will soften and turn bright orange when they are cooked.
3. Place the noodles in a bowl, and crack an egg over them. Stir thoroughly.
4. Pack each of the two ramekins with sweet potato noodles until they are both halfway full.
Cover the contents of both ramekins with wax paper. Make sure to push the wash paper down so that it sits directly atop the noodles. Put one canned food item over each ramekin to help create the buns take shape. Refrigerate for 15 minutes.
5. While the noodles are in the refrigerator, make the avocado goat cheese spread. Mix the avocado and goat cheese thoroughly in a bowl. To make this recipe vegan, you can skip the avocado goat cheese spread and just use sliced avocado instead!
6. After you take the noodles out of the refrigerator, remove the two canned food items and the wax paper. Place a large skillet over medium heat, and add in 1 tablespoon of olive oil. Over the skillet, turn one of the ramekins over and gently tap until the sweet potato bun contained in the ramekin falls into the skillet. Cook the bun for 3 minutes, flip it over, and cook it for another 3 minutes.
7. Repeat step seven with the other ramekin.
8. Put one of the buns on a plate, and smear the avocado goat cheese spread on top of it (or add sliced avocado, depending on what floats your boat). Add 1-2 pieces of kale and 1-2 slices of tomato. If desired, smear more of the spread on the bottom of the top bun or add more sliced avocado. Place the top bun on top of the burger.
9. Enjoy!
